I was at Against the Grain today and got info on a new bakery which opens August 21st on 9495 S 560 W Bldg D called Eleanor's Bake Shop. All of their food will be gluten free including sandwiches $4.50, soups $3.50, salads, muffins, cookies and cake balls. They had a sample of the cake balls (which are a little bigger than a donut hole and frosted with fondant) and they were delicious!
I also heard that Red Rooster in Jordan Landing has gluten free waffles which are very good, and Buster Burgers in South Jordan has GF buns for hamburgers.
I should also let you know in case anyone eats at Cafe Rio that they have recently changed their recipes and they add gluten to everything except the vinaigrette dressing and grilled meat. The company told me nothing else is GF any longer.
